Question Jammen question

We made 2 different kinds of jam Peach and nectarine and in both the fruit floated and the syrup went to the bottom?? It still set but why??

I had something similar happen with whole berries once. Apparently, I hadn't cooked it down long enough to get all the air & water out of the berries so they floated. Still safe to eat, just had to stir it up first. The next year I mashed the berries a little and cooked it a little longer and the fruit didn't separate from the jelly. Don't know if that's the issue with your peaches and nectarines, but it might help.

My peach jam did that this year too. It's still good, just gotta stir it up. I agree with Plickety Cat, I'm going to cook mine down a little longer next time before I put it in jars.

I usually mash peaches and such. Measure your fruit as chunks. Put them in the microwave long enough to soften, mash them with the potato masher or the bottom of a glass, and proceed with the recipe.
