Favorite ways to use duck??

We have processed a few ducks in the past, but never this many. Older gentleman is moving & is giving us around 50 muscovees. I counted at least 30. Going to pick them up in a couple hours. I know my family can use duck sausage at least once a wk. I have ordered casings online & didn't like them, however we liked the casing of the processed boar sausage a friend gave us. Going to see if the processor will sell us some casings.
I am wondering if there are 50 ducks how can my family of 4 best use them. We already have silver appleyards & runners. Not sure if I am interested in keeping any others. DD is already asking if she can have just a few for her to keep.
Any yummy ways you use ducks?? I have a friend who wants a few ducks, but most of our friends & family would never eat a duck.
Anyone cook with ground duck? Willing to try anything. In the past we roast whole. But with so many it's a good time to experiment!

My family likes duck and asparagus stir fry and duck tacos.

Duck, corn tortillas, and avocado is one of those magic food combinations.

Also roasted duck with a glaze made 50/50 with frozen orange juice concentrate and red current jelly. Sliced apple and onion in the body cavity while it cooks.

I know that a lot of people on here use the Muscovy just like you would beef.. burgers, kabobs etc...
We roast them and eat that the first night (I like to serve it with a wild rice and veggies dish)
The leftovers I use like beef.. thick stews, a really good duck and barley soup etc..

The last one I did about 2 weeks ago, I parted out the leftovers and equal amounts of stock into freezer bags to thaw for soups and stews later on. We had the duck the first night, then a big, big pot of soup and I still had 3 extra bags for teh freezer.
I don't foresee buying beef for stews ever again.

I am going to send some through the meat grinder & test ways we like it. I google recipes & came with bunch of options on a hunting site.
