Hummus
Would like to try and make Hummus. But, I can't have beans of any kind. Is there anything else that can be used?

The only way I know of to make hummus is with garbanzo beans or chick peas or a combo of the two. You could try just chick peas if you can have other legumes. But if you can have legumes at all, I don't think you'll want to risk it.

try roasted eggplant pureed and given the same herbs etc.
