Gluten Free Crackers

Costco has a new brand of whole grain gluten free crackers that are really good. Costco's rice crackers are weak on flavor, but nice texture. A box from Walmart had something licorice flavor in them and they are awful; bad flavor, not great texture.

I've been perfecting baked goods and crackers are my current quest. Gluten free crackers are outrageously expensive to purchase. Home made rice crackers don't work. Rice flour when mixed with water turns into plaster of Paris and crackers are inedible.

I haven't yet perfected crackers, but this is my latest attempt and they are edible, taste good with a slice of cheese on them, and they are crispy. They will hold together with mayonnaise on them, at least long enough to eat them. Probably wouldn't hold very long.

I'm going to publish because the holidays are upon us and maybe someone who needs gluten free might like to participate in the cheese platter. At this point, they seem to be about halfway between a cracker and bread.

Gluten Free Crackers

2 1/2 cups gluten free flour
1 t sea salt
1 cup plain yogurt
1/2 cup butter, softened
2 tablespoons melted butter
Course salt

cream the yogurt and butter together until they are well mixed. Add the flour and salt to form a stiff dough.

Roll the dough out thin, baste the top with butter and sprinkle with salt. bake 425 degrees for about 10 minutes

Cooks notes:

I rolled the dough by placing it between 2 sheets of silicon baking sheet. I also tried making small balls and flattening them by hand. Both worked. They must be very thin.

I baked them on silicon baking sheets, so sticking was not an issue. Tops did not brown well, but the underside came out slightly browned.

They are more crisp the next day.

I have lots of things to try with them: add toasted sesame seeds, Parmesan cheese, flax seed, cheddar. I also might try adding a small amount of rice flour to see if that makes them more crispy.

Depending upon what gluten free flour you use, you might also have to add xanthan gum.
