Granola Flavors

Someone in a different forum mentioned adding ginger to granola. I am going to try that.

What do you all add to granola to change the variety? I make cinnamon, plain vanilla, almond (1 teaspoon of almond extract 1 Tablespoon vanilla, toasted sliced almonds), and just did a batch of maple that turned out pretty good.

Of course, fruit gets switched around: cranberries, dried blueberries, dried apple (usually with the cinnamon), diced dried apricots or peaches.

Nuts vary from walnuts, almonds, pecans, pumpkin seeds.

Every batch contains coconut, flax seed, vanilla extract, brown sugar.

I'm the ginger adder! ; ) I use a good bit of it, with a tiny amount of cinnamon... I find that cinnamon is often ovedone~, present in way too many things, when we have so many other flavors we can use. ; )

My favorite combination is whole rolled oats, cranberries, pecans, olive oil (tiny amount), turbinado sugar (tiny amount), couple of tablespoons of molasses. Simple and oh, so good.

My kids' favorite granola is one I made up~

Cracker Jack Granola

10 cups oats
1 1/2 cups raw peanuts, chopped
1 cup brown sugar
1 t. salt
1 cup butter, melted (I used salted)
1 cup simple syrup or corn syrup
1 t. vanilla

Mix dry ingredients in large bowl. Mix liquid ingredients in medium bowl. Pour liquid mixture over dry mixture and stir until all dry ingredients are evenly moistened.

Spread mixture onto 1 or 2 well-greased baking sheets and bake about an hour at 350, stirring every 15 minutes. It is done when it is all evenly brown. Cool completely and store in an airtight container.

Makes about 12 cups or 24 servings.

I like to switch it up too, depending on what mood I'm in. I get bored with the same old thing. I switch sweeteners, from brown sugar to honey to molasses to maple syrup.

I use extracts including vanilla, almond, peach, orange, lemon, raspberry, etc., to complement the dried fruits I'm using. Every once in a while, I throw in a little homemade jelly or jam for an extra flavor punch.

For spices, I probably do use cinnamon, nutmeg and ginger the most, but also use cloves, cardamom, allspice, and anything else that strikes my fancy, lol!

I vary the nuts, using pecans, walnuts and almonds mostly, but sometimes hazlenuts, black walnuts or hickory nuts. I also use peanut butter sometimes.

For dried fruits, I use apples, peaches, cranberries, cherries, pears, pineapple, raspberries, strawberries, blueberries, figs, dates, and bananas.

Sometimes, I use coconut, sometimes plain, sometimes toasted.

I might use oatmeal, barley flakes, buckwheat flakes, puffed rice, flax seeds, wheat germ, sunflower seeds, or pumpkin seeds.

I do one I call "apple pie granola". It has oatmeal, wheat germ, pecans, dried apples, raisins, brown sugar, a little oil, and apple pie spice (I make my own from cinnamon, nutmeg, cloves and allspice).

Another one is "peach melba cobbler granola". It has oatmeal, barley flakes, dried peaches, dried raspberries, almonds, honey, almond extract, and vanilla extract.

A really popular one is "carrot cake granola". It has oatmeal, puffed rice, grated carrots, coconut, raisins, walnuts, applesauce, cinnamon, ginger, nutmeg, and molasses.

Can you tell I love granola?? lol I don't have real recipes, just throw together whatever sounds good, maybe add a little bit of oil to help hold it together if needed and bake it. Sorry, I could go on all day!
