Easter Menu Ideas...

I am thinking of having Easter dinner at my home this year. I am not sure what I want to serve though. I really want it to be fuss free yet tasty so I can really enjoy the true meaning of this special day.

Any menu ideas for a brunch or dinner that serves 9 would be appreciated. I am thinking maybe a brunch with spiral ham and sides but I really want it low key and if I can make some dishes ahead that would be great as well.

Hi Emmy Lou,

Here's what we are having:

~Baked Ham with a Brown Sugar Apricot Glaze
~Sweet Potato Casserole with Praline Topping (this I make ahead of time but do not put the topping on and bake until Easter)
~Garlic Roasted Asparagus (No fuss, just place in a casserole tossed with Olive oil, minced garlic and salt and pepper to taste, roast in oven about half an hour)
~Honey Pan Rolls (got the recipe here, they are awesome! And I make these ahead of time also)

We are probably going to have a Coconut Cake for dessert.

If you would like any recipes let me know I don't like to spend too much time in the kitchen on Christmas or Resurrection Day either. Don't want to be a Martha

OH MY!! You are going to laugh but this is the truth...

I called my mom and we were talking about the meal this morning. I said I thought I might make a ham and mom said she would make her southern praline sweet potatoes and I then said maybe I would make something with asparagus as well...LOL!!!

CONFIRMATION or what? If you could give me the complete asparagus recipe that would be lovely. I am going to go check on the honey roll recipe as well. Thanks so much and I agree about enjoying the day and capturing the true meaning.

I am doing lamb and asparagus for sure. Maybe fingerling potatoes. I coat my asparagus with olive oil, sprinkle on sea salt and then put it under the broiler. I watch it close so it doesn't burn. My kids love asparagus fixed this way.

I make a spring salad that everyone loves. Mixed mesclun greens, sliced strawberries, steamed and chilled asparagus, orange slices ( cut on the bias so they look neat ), walnuts and use a raspberry vinagrette. Very colorful on the Easter table , good for Brunch or Dinner

We are having a grill fest with lamb, asparagus, onions, potatoes, and mushrooms.

Also, after reading Vickie44's spring salad, that as well. I wonder how it would taste with a bit of red onion thrown in?

Tirzah, would you be willing to share your coconut cake recipe with all of us?

No Easter Menu here due to wife is due to have baby. So guess we be ither at hosptial or having a place cooking for us.

Your meal sounds so good. I bet the red onion would be really good in Vickie's salad.

Here is the cake recipe. It is actually from Cooking Light BUT you would never guess it

Double Coconut Cake

Cooking spray
One Tablespoon cake flour
Two ¼ cups sifted cake flour
2-¼ teaspoons baking powder
½ teaspoon salt
1 2/3 cups sugar
1/3-cup butter, softened
Two large eggs
1 (14 ounce) can light coconut milk
1-tablespoon vanilla extract
Fluffy coconut frosting
2/3 cup flaked sweetened coconut, divided

Preheat oven to 350 degrees.
Coat two (9-inch) round cake pans with cooking spray; dust with one Tablespoon flour.
Combine 2 ¼ cups flour, baking powder, and salt, stirring with a whisk. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (for about 5 minutes). Add eggs, one at a time, beating well after each addition. Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour mixture. Stir in vanilla.
Pour batter into prepared pans. Sharply tap the pans once on counter to remove air bubbles. Bake at 350 for 30 minutes or until wooden pick inserted in the center comes out clean. Cool in pans 10 minutes on wire racks, and remove from pans. Cool completely on wire racks.
Place one cake layer on a plate; spread with 1 cup fluffy coconut frosting. Sprinkle with 1/3-cup coconut. Top with remaining cake layer, spread remaining frosting over top and sides of cake. Sprinkle 1/3-cup coconut over top of cake. Store cake loosely covered in the refrigerator. Yield: 14 servings.


Fluffy Coconut Frosting

Four large egg whites
½ teaspoon cream of tartar
Dash of salt
1-cup sugar
¼ cup water
½ teaspoon vanilla extract
½ teaspoon coconut extract

Place egg whites, cream of tartar, and salt in a large bowl and beat with a mixer at high speed until stiff peaks form. Combine sugar and water in a saucepan; bring to a boil. Cook. Without stirring, until a candy thermometer registers 238 degrees. Pour hot sugar syrup in a thin stream over egg whites, beating at high speed. Stir in extracts. Yield: about 4 cups

We'll be having ham, butternut squash, broccoli soup (recipe in the recipe's section), twice baked potatoes, and my sister brings an easter egg cake she makes every year.

Hopefully we'll have enough asparagus from the garden, and I'm going to try processing our horseradish for the first time this year also.

We'll be doing our Polish Easter as usual. Glumpki, ham, pierogis, broscht, fresh (not smoked) kielbasa, kopytka, jajka, beet horseradish, and babka for dessert.

Those Honey Rolls are DIVINE,
Thanks for reminding me as they will be perfect for our Sunday dinner.
We don't celebrate easter now that our kids are grown...BUT... last night I found out that my stepmom is going to be here ( got the "Yes, we have our tickets" call) and I'm scrammmmbling to come up with a meal plan for that day (her beau will cook Saturday).
Honey Rolls
Pulled Pork
Candied Yams
Greek Green Beans
Sauteed Cabbage
Quinoa Salad
Blueberry Crisp

We have Easter every year, and some things are always the same - pierogies and cabbage rolls, for sure. This year, I will be roasting 2 of our own chickens too, and I think we will have salad with wild greens, apples and blue cheese. Probably pie and maybe a pavolva for dessert (we are over run with eggs!). We used to make Easter themed and decorated sugar cookies, but DH doesn't feel like painting cookies this year.

I think I will make a big pan of lasagna with garlic bread and salad. It's just my hubby and I and lasagna is easy to freeze in single serve portions.
