Buttermilk Coconut Pie

Buttermilk Coconut Pie

5 eggs
1 stick melted butter or margarine
1 cup buttermilk
2 cups sugar
1 cup coconut (I toast my coconut )
1 unbaked 9 inch pie shell

Beat eggs well, add butter, buttermilk,
sugar and coconut.
Pour into the pie shell...bake at 350
degrees about 30 minutes or until the
set in the center.

I will have to try this recipe next time - I just made a coconut cream pie this morning.

That sounds delicious! I wonder if it would work with coconut oil? I can't get enough coconut!

Is that sweetened coconut like one finds in ordinary American supermarket baking aisles, or real unsweetened coconut, such as one finds in the frozen section of Asian grocery stores?

I can't make this one very often or I will have to replace all my clothes with bigger sizes.
