morning,
Here in Tn we have to sell live weights. So we give them a guess of what the animal should weigh and have the processor put it on the scale off of the trailer. we get a deposit before it gos to the processor and the buyer fills out the cut sheet and pays all costs. The big point is they own it before it is in the trailer.
We also sell usda retail beef so things can get a little twisted. As the processor would rather deal with us al the way through. So we are involved all the way through the process. We get final payment when they pick up there meat in cash. Before the processor will release it.
The contract for what it is worth details approx. costs for everything going in there are no surprises.

Also, since he's a Jersey, be sure your buyer is aware that the fat will be yellowish. Jersey meat is yummy but the fat color can be a little disconcerting if you are not expecting it.

Okay, where would I go to find the laws on sale of beef/cattle?

I know, some people in my family won't even eat it because of the color.
But I think if beautiful yellow butter is good so is yellow fat in my beef
