I thought that seemed a little high to be hanging weight, don't know of any proccesers that charge by live weight. We just sent our first Jersey steer last week but he wasn't as "plump" as yours! Can't wait to try it from what I have heard Jersey beef is hard to beat.

Jerseys can certainly pack on the fat fairly easily in my experience.
Big Day  (pic) - Cattle
Blue Moon there was a three year old Jersey heifer. She hadn't had regular access to grain since she was 12-15 months old. We would use about 5-10 pounds to bring up the group of 35 head once or twice a year and she would get some of that.
What is scary? She went on to get bred and calve. Not an easy calving with all the fat build up around her reproductive organs. Very small bull calf.
A young vet ended up inadvertently killing her in her first lactation. She wasn't milking half bad either.

Our Jersey steer hung at 610lbs, so I guess he wasn't too far behind.

G Sheddon....it was a two meal steak ..I finally CHOKED IT DOWN nobody had to twist my arm though...wow are they good...
