Hi Ronnie - the ratios I've relied on, and from converstiations with others included 2+ weeks of hanging, so from my opinion I'm losing 80lbs on top of hang-time loss.
I will ask, if their rates just went up, but when I first discussed beef butchering costs earlier this year his rates were a flat $0.65 per # for all cuts. The only extra costs would be if he was going to provide a corned beef or other specialty. This is what I relied on when pricing out my costs to my other 3/4's.
My hope is that the butcher's wife does not realize this is a lean grass fed steer and is quoting what they get from an uber fat grain fed cow that might have more loss.
We'll know for sure on Monday...
