We did ours last Nov by ourselves it was a job that hide is TUFF make sure you have plenty of big sharp knives we did ours on a plastic tarp He did not kick much after I shot him between the eyes with an AKS. He was a good cow raised him by hand from when he was 3 days old, killed at 9 months since I was shipping out over seas. We cut off the hide got rid of the innards wow that heart and liver were good eating and then we cut off the legs and so on I hung the legs in the barn to age 4 days and the rest cut off the bone and put in the freezer.
